Arborio - it is a variety of short-grained rice used primarily to classic Italian dish - Risotto. Short, wide and slightly oval-shaped Arborio rice has a pearly white exterior. It takes less time to cook Arbotio than ordinary long-grained rice, so it remains more of its natural starch content.
